Tomato and egg Omelette Sandwich

Ingredients List
—————————
5 eggs
Salt and pepper to taste
2 medium to large tomatoes
1-2 tbsp olive oil
Cheese of choice or optional ( I used cheddar)
Fresh coriander to garnish
Butter and toast (optional)

‼️Cook on low heat throughout until egg is completely cooked and no longer runny on the top. Can be covered with a lid to cook fully and melt the cheese if added‼️

Always taste and adjust seasonings as my recipe acts only as a guide. Individual tastebuds are different and substitutions can be made throughout.) Terri
