Ingredients list
———————

Barbecue Jerk Chicken
———————————

1 kg drumsticks (or chicken of choice)
1 tsp salt
1 tsp black pepper
1 tsp chicken seasoning
1 tbsp green seasoning
1 tbsp jerk seasoning
1/2 tsp browning
2-3 tbsp barbecue sauce

Bake for 1hr 20 minutes on 200•C basting and turning every 20 minutes.


For Jollof Rice
——————-
Blend these ingredients below.
1 red bell pepper
3 garlic cloves
2 large red onions
1 tin tomatoes
2 slices of ginger
1 scotch bonnet pepper

To the pot
—————

1/4 cup vegetable Oil
1 large red onion chopped
5-6 tbsp tomato purée

(Cook for 20 minutes stirring occasionally).

3 cups basmati rice
2 bay leaves
1/2 tsp curry powder
1/2 tsp salt
2-3 maggi/knorr cubes
1/2 - 1 cup chicken stock or water

Important tips
* stir your rice every ten minutes so it can cook through evenly or else it will burn at the bottom and not cook on top.
* Keep heat on low throughout.


For the Cake
——————
230g sugar
250g butter
150 g self rising flour
100 g plain flour
5 eggs
1 lemon skin grated
1 tbsp vanilla essence

Bake for 40 minutes on 200•C or until skewer Comes out clean.


For Coleslaw
——————-
2 medium carrots
1/2 tsp vinegar
1 slice cabbage
1 tbsp honey (optional)
1/2 tsp black pepper
3-4 tbsp mayonnaise (optional)
