Oven Chicken and Rice Recipe

1kg chicken thighs (chicken of choice)
Salt & black pepper to taste (about 1tsp)
1 tsp parsley
1 tsp all purpose seasoning
1 tsp smoked paprika
1 tsp garlic powder
1 tsp mixed herbs (thyme, basil marjoram)
3 tbsp Olive oil
1/2 tsp gravy browning (optional)

Blend -
2 pointed peppers
2 green chillies
2 mini peppers
2 spring onions

1/2 red onion (or white)
2 bay leaves
Salt and pepper to taste
All purpose seasoning
1/2 tsp curry powder
3-4 cups chicken stock (or water)
2 scotch bonnet peppers
3 cups basmati rice (or rice of choice)
1-2 tbsp butter
Fresh thyme

Bake for 35 minutes in the oven on 180•C. Alternatively steam on low heat in the same pit for 25 minutes.
