For Oxtail
—————
1kg oxtail
1 tsp salt
1 tsp black pepper
1 tsp chicken and meat seasoning
2-3 tbsp green seasoning
3 sprigs thyme
2 tbs ketchup
1 scotch bonnet pepper
4 cups water
(Cook on low for 2hrs stirring occasionally)
For Mac & Cheese
—————————
3-4 cups water
1 tsp salt
250g pasta of choice
1 tbs green seasoning
1-2 tbsp butter
1 tbsp flour
3 cups whole milk
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
150g mozzarella
150g mature cheddar
150g Red Leicester cheese
(Cheese can be any of your preference- it doesn’t have to be the same ones I used)
Chilli flakes (optional)
Bake uncovered on 200•C for 25-30 minutes.
Seasoned Rice
———————
3 cups basmati rice (or rice of choice)
2-3 cups water
1/2 can coconut milk
1 1/2 cup mix veg
3 sprigs thyme
1 scotch bonnet pepper
1/2 tsp salt
1/2 tsp black pepper
1 maggi cube (optional- can use all purpose seasoning as a substitute)
