Cou Cou and Tinned Mackerel Recipe

For Cou Cou

1 cup cornmeal
1 & 1/4 cup coconut milk
1/4 cup water
8 okras blended or chopped
1/4 onion
1/4 red bell pepper
1/2 tsp salt
1/2 tsp black pepper
1 tbsp butter

Total cook time 10-12 minutes.



For Tinned Pilchards
——————————

1 tin Pilchards / Mackerel in tomato sauce
3 spring onions
1/2 tsp black pepper
1 tbsp tomato paste
1/2 onion
1/4 red and yellow bell pepper
1 tbsp oil
