Creamy Garlic and mushroom chicken

Ingredients List
—————————
500g Boneless chicken thighs
1 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
1 tsp oregano
1 tsp garlic powder
1 tbsp olive oil

For rice
—————
1 cup jasmine rice
1 & 1/2 cup water or chicken stock
1 tsp oil or butter
1/2 tsp salt
4 sprigs thyme

For sauce
——————
1 tbsp olive oil
1 White onion
3 garlic cloves
1 cup double cream /heavy cream/ coconut milk etc (use preference)
200g mushroom
1/2 tsp salt, black pepper, garlic powder, paprika
1 small handful cheese of choice (optional) I used mild cheddar
Fresh coriander to garnish
